Kaslo Sourdough, a Kootenay-based sourdough pasta producer, is pleased to announce a new research partnership with Michael Gänzle, Professor and Canada Research Chair in Food Microbiology and Probiotics, Department of Agricultural, Food and Nutritional Science at the University of Alberta in Edmonton. The four-month project being undertaken is called “Characterization of a sourdough used for pasta production”.

The intent of this project is to examine the specific bacterial composition of Kaslo Sourdough’s sourdough culture. The project objective is to isolate and identify the major fermentation organisms in the natural sourdough culture in order to understand which specific lactic acid bacteria comprise Kaslo Sourdough’s proprietary sourdough.

Kaslo Sourdough owner Silvio Lettrari is thrilled. “It is very exciting to find out whether we have a unique bacterial composition in our sourdough – I suspect that we do, but now we’ll know for sure.”

The bacteria in a sourdough culture are responsible for the fermentation that occurs when the culture is included in products such as breads and pastas. They perform important functions that help influence the unique characteristics of the product they are made with, including texture and flavour, and importantly, contribute to making sourdough fermented products easier to digest.

Kaslo Sourdough uses a sourdough culture to ferment both their varieties of breads and pastas. Understanding the specific bacterial composition of the sourdough culture may result in information about the role of fermentation for contributing to the unique characteristics of Kaslo Sourdough’s products.
